Vegetable of the Month: June = Lettuce

Lemony Salad Dressing

Ingredients (For the salad)
2 cups chopped fresh lettuce
Optional: Cucumbers, tomatoes, radishes or any other fresh vegetables you enjoy!

Ingredients (For the dressing)
1⁄4 Cup olive oil
1⁄2 of a lemon
1 1⁄2 Tablespoon honey 5 sprigs of parsley
1⁄2 teaspoon salt

Instructions
Squeeze the half lemon into a bowl to get the juice. Remove the seeds
Chop parsley into very small bits
Combine all ingredients in a bowl and whisk together
Toss with fresh salad and enjoy!
