Beet Salad & Orange Balsamic Dressing
Ingredients
3 beets
1.5 oz spinach
2 tablespoons feta cheese crumbles (optional)
1 orange, zest and juice
2 tablespoons balsamic vinegar
1 tablespoon honey
1 garlic clove
1 teaspoons dijon
½ cup extra virgin olive oil
Directions
Boil or roast the beets using one of the methods below*. Roasting will give a richer flavor, boiling is faster. Peel the cooked beets and slice thin (use a mandolin if you have one). Over a bed of spinach, layer beet slices, and sprinkle with feta. Drizzle with dressing and enjoy!
*Roasted Beets - Preheat oven to 400. Wrap whole beets in a foil bag with a small amount of water. Roll to seal and roast for 25-35 mins until they are tender when pricked with toothpick.
*Boiled Beets - Add whole beets to a medium pot and cover with water. Bring to a boil, then simmer until tender when pricked with a toothpick, about 15-20 minutes
