Broccoli Rabe Bruschetta
Ingredients
1 French Baguette
2 cups broccoli rabe, coarsely chopped
1 cup cannellini beans
2 tablespoons butter
1-2 cloves of garlic
Zest of ½ lemon
Sea salt to taste
Directions
Remove any tough stems from the broccoli rabe.
Warm a saute pan and gently wilt broccoli rabe over a low heat for 3-4 minutes.
Add the garlic, lemon zest and cannellini beans and warm.
Finish with lemon juice and sea salt.
Slice baguette in ½” bias slices.
Toast or serve fresh topped with the broccoli rabe mixture.
Top with parmesan cheese if desired.
