Spinach Dip

Ingredients

1-tablespoon olive oil
1-clove garlic, minced
1-pinch of salt
1-8oz cream cheese
1/2 cup sour cream
4-cups of coarsely chopped fresh spinach (5 oz bag) 
1/8-teaspoon cayenne pepper 
1/3 cup parmesan cheese, grated
1-bunch of scallions, chopped
2-tablespoon lemon juice (optional)

Directions

Add oil to a medium pan over medium-high heat.
Sauté scallions until soft, two minutes.
Add spinach and cook until wilted.
Take off the heat to cool.
In a bowl, mix cream cheese, sour cream, salt, and pepper.
Add spinach mixture, lemon juice and parmesan cheese.
Season to taste.
