Stovetop Apple Crisp
Ingredients
Topping
1 cup rolled oats
2 tablespoons butter
1 teaspoon vanilla
¼ teaspoon cinnamon
¼ cup sugar (maple, brown or other)
¼ teaspoon fine sea salt
Filling
5 apples, diced (peel if desired, dish will lose fiber)
2 tablespoons butter
2 tablespoons maple syrup, optional
½ teaspoon cinnamon
Directions
In a cast iron or other non-stick skillet, melt butter. Sprinkle sugar over pan and immediately top with oats, stirring to combine. Cook over low heat for 4-5 minutes. Stir in vanilla, cinnamon, sugar and salt. Cook an additional 3-5 minutes until oats have lost their “raw” flavor. Pour pan contents onto a piece of parchment paper, spread in a thin layer and allow to cool. If you don’t have parchment, spread onto a cutting board to cool.
In the same skillet, melt butter and add diced apples, optional maple syrup and cinnamon. Over medium heat, cook apples until soft when pierced with a fork, about 8-10 minutes, stirring frequently. If your apples do not seem soft, pour ¼ cup water into the skillet and cover, cooking and additional 3 minutes. Adding a few minutes of steaming should soften them quickly.
Enjoy the cooked apples topped with the crunchy filling! Add whipped dairy or coconut cream for extra decadence!
