Colcannon
Colcannon is a traditional Irish dish of mashed potatoes with kale or cabbage.
Ingredients:
2 lbs potatoes (boiled in advance)
1 bunch kale, de-stemmed and chopped
2 cloves garlic, minced
½ - 1 cup greek yogurt
1 cup green peas
1 tablespoon olive oil
Salt and pepper to taste
Directions:
In a deep skillet, cook the garlic and olive oil until fragrant, around 3-4 minutes. Add the kale and cook for a few minutes longer. In a separate bowl, mash potatoes with the Green Yogurt. Stir all ingredients together and heat until warmed through.
