Orange Ginger Glazed Beets and Carrots
Ingredients
3 beets
6 carrots
2 oranges
1 thumb-sized piece fresh ginger
2 tablespoons extra virgin olive oil
Few sprigs of fresh mint
1 pomegranate, if desired
Few pinches of sea salt
Directions
Peel and halve beets.
Peel carrots but keep whole.
Rub with olive oil and roast on separate baking trays at 375 degrees until tender when pierced with a fork (carrots about 15 minutes, beets about 25 minutes).
Allow to cool.
Zest 1 tablespoon of orange peel and set aside.
Squeeze the oranges and warm the juice in a small saucepan over low heat.
Add the zest and ginger.
Stir occasionally as the juice reduces by half.
Chop the roasted vegetables into bite sized pieces.
Toss with orange juice reduction and fresh mint.
Also delicious when garnished with pomegranate seeds and a little sea salt.
