Quick Pickled Turnips

Ingredients

10-12 turnips
½ cup red wine vinegar
½ cup water
1 Tablespoon sugar
1 ½ teaspoons kosher salt

Directions

Wash the radishes, and cut off their greens and root.
Slice the radishes thinly with a knife or a mandolin, and pack them in a jar.
Whisk together the vinegar, water, sugar, and salt and pour into the jar. 
Refrigerate for at least 15 minutes before serving. 

Optional

Add spices such as peppercorns, cumin seed, star anise, mustard seeds, or a bay leaf. Or a sliced chili pepper if you like it hot!

Use on

Tacos
Sandwiches
On sliced baguette with goat cheese
Or eat by themselves!
