Sweet Corn Salsa

Ingredients

2 cups sweet corn kernels
1 bunch of radishes, sliced 
1 sweet pepper, diced small
1 small bunch chives, chopped
1 small bunch cilantro, picked off stems and chopped 
Juice of 1 large or 2 small limes
1 teaspoon sea salt
Cotija cheese (optional)
Tortilla chips 

Directions

Cut fresh kernels off the cob or thaw frozen kernels in warm water.  
Strain the kernels if they were thawed out.  
In a medium bowl, mix corn kernels, radishes, pepper, herbs, lime juice and sea salt.  
Top with optional crumbled cotija cheese and serve with tortilla chips!
