Ingredients: Pasta with Chicken and Broccoli with Garlic Sauce

4 oz Chicken Soup Base
1 Gallon Water
1 1/2 Cup Raw Garlic
1 Cup Vegetable Oil
1 lb Raw Celery
1 lb Raw Onions
1 1/2 Teaspoon Dried Oregano Leaves
1 Tablespoon Salt
1 Tablespoon of Cracked Black Pepper
10 lbs Diced Precooked Chicken
2 lbs Grated Parmesan Cheese
10 lbs Frozen Broccoli Florets, Thawed

Cook Pasta in kettle, rinse, drain set aside
Reconstitute chicken base with 1 gallon water
Saute garlic until golden brown in oil in kettle
Add celery, onion, oregano, salt and pepper
Sweat vegetables until soft
Add base/water mix to kettle, add cooked chicken meat and bring to boil. When chicken reaches 165 deg, add broccoli, cook until broccoli is softened and bright green.
Add pasta, heat to 165 degrees
Place in 4 inch pans and hold at 165 until service.

Service is 1 cup pasta with chicken and broccoli

CCP: Heat to 155° F or higher for at least 15 Seconds

CCP: Hold for hot service at 135° F or higher
