Chicken Cacciatore
Ingredients:
Portion size 1 piece of chicken
Number of portions 100
100 3oz Edible Portion Roasted Chicken
6 Cups Chopped Onions
1/3 Cup Peeled Garlic
6 Cups Green Sweet Peppers Chopped
400 Oz Crushed Canned Tomatoes, drained
1/2 lb Grated Parmesan Cheese
1 Quart Tap Water
3/4 Cup Vegetable Oil
1/8 Cup Garlic Powder
3 Tablespoons Table Salt
1 Teaspoon Black Pepper
Preheat oven to 375 degrees
Heat oil in kettle, add garlic and saute for 1 minute
Add onions and saute for 5 minutes or until translucent
Add green peppers and cook 5 minutes stirring occasionally
Add tomatoes and spices
Thin with water as needed
Reduce heat and simmer for ten minutes
CCP: Heat to 165 degrees or higher for at least 15 seconds
Add bone-in cooked chicken to sauce, simmer for 40 min
Service is 4 oz sauce with 1 leg and 1 thigh or 2 thighs
CCP: Hold for service at 135 degrees
