Ingredients: Chicken Fajita Rice Bowl

20 lbs Chicken Fajita Strips
100 Cups of Brown Rice
4 lbs Sweet Red Peppers
4 lbs Sweet Green Peppers
2 10lb Cans of Cooked Black Beans
5 lbs Yellow Whole Kernel Corn, Cooked from Frozen
5 lbs Fresh Diced Tomatoes
2 lbs Diced Red Onions
10 lbs Sour Cream
5 lbs Cheddar Cheese, Reduced Fat

Season fajita strip chicken
Cook in oven to min 165 degrees
All items served separately to build bowl

On hot line:

Rice
Chicken
Black beans in canned juice
Sour cream

Portions for bowl:

3 oz chicken
1/2 cup beans (double this if student does not take chicken)
Shredded cheddar 1 oz

On salad bar for self service:

Red and green peppers diced
Red onion diced
Clean chopped lettuce
Diced tomatoes
Choice of salad dressing

Service in 12 oz bowl
