Ingredients: Chicken Gyro with Tzatziki Sauce

10 lbs Chicken Fajita Strips, Grilled
1 Cup Olive Oil
1/2 Cup Peeled Garlic
1/2 Cup Lemon Juice
2 Tablespoons Oregano Leaves Dried
75 Richs Panini Flat Bread (6x6)
10 lbs Lettuce
9 lbs Tomatoes
75 (2 oz portions) of Tzatziki Sauce

Make tzaziki sauce per recipe # 903310
Marinate Thawed chicken, oil, spices lemon juice for 1 hour or overnight
Roast seasoned chicken in oven on sheeted pan to 165 deg
Hold in deep hotel pan for line service

Service:

1 Flatbread
2 oz chicken
2 oz tzaziki sauce
shredded lettuce
Sliced onion 1/8 cup
Diced tomato 1/8 cup
CCP: Hold for hot service at 135° F or higher
