Lentil Soup


Ingredients: Lentil Soup

6 2/3 Cups Raw Onions Chopped
1/4 Cup Raw Garlic
3/4 Cup Olive Oil
1 Tablespoon Dried Basil
1 Tablespoon Dried Oregano
1 Tablespoon Dried Thyme
36 Oz Canned Tomatoes
6 lb Raw Dry Lentils
4 Gallons Water
6 lb Raw Spinach
8 oz Low Sodium Chicken Base

Sauteed onions and garlic in oil over medium high heat for 2-3 minutes
Add spices, tomato paste, lentils, water and salt to taste
Simmer for 40 minutes over a medium heat, stirring occasionally
Add chopped spinach and simmer for 25 minutes until lentils are soft
Frozen chopped spinach could be substituted for fresh
