Lemony Kale Salad with Apples
Ingredients:
Portion size 1/4 cup
Number of portions 100
25 Cups of Raw Kale, Chopped
1 Cup of Lemon Juice
6 oz Red Wine Vinegar
1 3/4 Cups of Olive Oil
16 oz Fresh Sliced Apples, Unpeeled
1/2 Teaspoon of Garlic Powder
1 Teaspoon of Salt
1 Teaspoon of Black Pepper
2 Tablespoons of Granulated Sugar
1 1/2 Cup of Seedless Raisins
Wash Kale (about 7 bunches) chip in bite sized pieces discarding center stem
Massage kale for best color and texture by hand for 1-3 minutes
Make dressing by blending spices with lemon juice and vinegar
Add the olive oil slowly while combining with wire whisk until incorporated
Add dressing to massaged kale a little at a time so it is not overpowering Add raisins and apple
This salad is best left to marinate with dressing for a few hours.
Service is 3/8 cup
