Minestrone Soup with Spinach
Ingredients:
Portion size 1 cup
Number of portions 100
1 cup Vegetable Oil
9 oz Onions Chopped
1 lb and 6oz of Carrots
6 oz Cabbage Chopped
8 oz Celery Chopped
2 gallons and 1 quart of Low Sodium Beef Stock
1 lb No Salt Tomato Paste
1 Teaspoon Black Salt
1/4 Teaspoon Ground Oregano
1/2 Teaspoon Parsley
2 Teaspoon Granulated Garlic
1 Teaspoon Table Salt
1 10# Can of Great Northern Beans
11 oz Dried Macaroni
2 10# Cans of Diced Tomatoes
6 lbs Frozen Chopped Spinach
Puree 1 can of the drained rinsed beans
Dice onions, sweat in kettle until translucent over a low heat
Add garlic, season with salt and pepper
Add tomato paste, cook until onions are coated
Add thawed chopped spinach drained, thyme
Add all of the beans including the blended ones
Add all tomato diced including the juice and the water
Add pasta
Bring to boil, reduce heat, cover and simmer pasta is tender
Serve with grated parmesan.
