School Made Hummus
Ingredients:
Number of portions 100
Size of portions 4 oz
64 oz of Garbanzo Beans
14 oz of Lemon Juice
14 oz of Tahini (Sesame Seed Paste)
4 Cloves of Garlic
1 Cup of Olive Oil
1/4 Cup of Table Salt
1 Cup of Water
1 Teaspoon of Paprika
Drain Garbanzo beans and rinse thoroughly
In the Robocoup blend tahini and lemon juice for 1 full minute
Scrape bowl and reprocess for 30 seconds
Add oil, minced garlic, cumin and salt to processor
Process for 30 seconds, scrape bowl, process again 30 seconds
Add drained rinsed garbanzo beans one cup at a time, process for 1 minute scrape sides and bottom of bowl, add remaining chickpeas and process for 1- 2 minutes until thick and smooth
Add water a little at a time while processing to thin to the best consistency
Drizzle with olive oil
Top each portion with a sprinkle of paprika
