Sweet Potato Hummus
Ingredients:
Portion Size 1/4 Cup
Number of Portions 100
9 lbs Sweet Potatoes
1 10 lb Can of Garbanzo Beans
1 1/2 Cups of Lemon Juice
1 Cup Tahini Paste
3 Tablespoons Cumin
3 Tablespoons Garlic Powder
1 Tablespoon fo Salt
1 Cup Chopped Parsley
Preheat oven convection 400
Line full sheet pan with parchment
Cut sweet potatoes in half lengthwise and place cut side down on sheet pan
Bake until tender, about 45 minutes cool and peel or wrap whole sweet potato with foil
Bake in convection oven at 350 degrees for about 35 minutes or until soft
Place peeled sweet potatoes in large stand mixer bowl or flat bottom container, blend until smooth
Add tahini and all spices blend on medium speed
Add parsley at end
CCP: Hold for cold service at 41° F or lower
