Tzatziki Sauce

Ingredients: Tzatziki Sauce

10 lbs Fat Free Greek Yogurt, Plain
3 1/2 lbs Peeled Cucumbers
1 Cup Olive Oil
1 Cup Lemon Juice
2 Tablespoons Salt
1 Tablespoons Black Pepper
1 Cup Raw Garlic
1/4 Cup Dill

Peel, seed and dice cucumbers
In processor combine all ingredients. This can also be done with an immersion blender
Blend garlic separately first
Process until well combined
Cover and refrigerate for at least 1 hour

CCP: Hold for cold service at 41° F or lower.
