Chorizo and White Bean Soup
Ingredients:
Portion size 1 cup
Number of portions 100
20 lb Turkey Sausage
2 Cups Vegetable Oil
8 1/4 lbs Onion
1 Cup Peeled Garlic
3 10 lbs Cans of Great Northern Beans
2 10 lbs Cans of Diced Fermano Tomatoes
10 Gallons of Low Sodium Chicken Broth
6 lbs Raw Spinach
7 3/4 Lbs of Red Sweet Peppers
Heat oil in kettle
Saute onions, peppes and garlic until translucent
Add sausage, cook for 5 minutes
Add beans, broth and tomatoes
Cook for 30 minutes or until flavors blend
10 minutes Before serving add spinach to wilt.
Service 1 cup chili
CCP: Heat to 165° F or higher for at least 15 seconds
CCP: Hold at 135° F or higher.
